The Power of “Just Add Two”  

Retailers do not need an exhaustive meatcase overhaul to capture current protein momentum. The strategy focuses on two simple, high impact moves: 

  1. Add one more ground pork item  
  1. Add one new pork cut  

This is not about adding more options for volume, it’s about purposeful additions that answer consumer demand and create incremental sales opportunities. Together, the additions serve two roles: ground pork provides an accessible entry point for younger and protein-focused shoppers, while a differentiated cut creates another way to discover and use pork. 

Start With Ground Pork 

Ground pork is already gaining momentum. Year-to-date dollar sales are up 8.1%, while volume is up 7%. Gen Z consumers also spend nearly 25% more annually on ground pork than the average shopper, making it an accessible entry point to the broader pork category. 

NPB analysis identified approximately $80 million in potential incremental ground pork sales by addressing gaps in lean points, package sizes and product formats. Depending on the retailer’s current assortment, that could mean adding a different lean point, package size, source grind or ready-to-cook option. For example, 93% lean was the fastest-growing labeled lean ratio, with volume up 25% over the latest 52 weeks. 

Create Another Reason to Choose Pork 

The second addition is a pork cut that gives shoppers another way to experience the category. A pork blade steak, coppa, pluma or another cut aligned with the retailer’s shoppers and pricing strategy could create greater choice and visibility.
